Ingredion launches first functional native, clean label gelling starch
Novation Indulge 2940, the first native maize starch with unique gelling and film-forming capabilities, has been introduced by Ingredion. It is ideal for use in dairy and nondairy cheeses, batters, and breading.
The newest development from the company's clean-label product pipeline is the minimally processed, functional native starch, which offers unique texture, mouthfeel, and natural claim enablement. Compared to the majority of hydrocolloids and other popular food additives for texture, it offers a label that is chosen by consumers worldwide: "corn starch." This information is based on Ingredion's patented ATLAS consumer insights. Between 2020 and 2023, maize starch's popularity among consumers in EMEA increased by 20 percentage points, indicating that the ingredient's appeal is becoming more widespread across many categories.
