UK zero-waste restaurant establishes new commercial fermentation site
The newly launched Fermentation Factory, a collaboration between Silo and Crate Brewery, is spearheaded by Silo’s R&D leader, Ryan Walker. This initiative aims to upscale the traditionally in house process of transforming challenging ingredients into high value products suitable for mainstream kitchens and bars. Silo will offer its fresh koji to other businesses, including restaurants, bakeries, breweries, bars, and home cooks, helping them reduce waste. In addition to fresh and dry koji, the factory will produce and distribute miso made from spent beer grains from Crate Brewery and a ‘zero soy sauce’ made from waste bread from the restaurant. Silo repurposes the uglier parts of leftover ingredients into what it calls liquid gold, a variety of ferments, misos, and garums used in the restaurant's tasting menu. These umami flavor enhancers give the meals distinctive flavor profiles while embodying founder Douglas McMaster's "closed-loop" cooking method. By providing businesses with essential tools for closed-loop processes, Silo aims to make sustainability accessible and economically viable on a commercial scale. The Fermentation Factory, set to open later this summer in an abandoned nightclub, marks the next step in Silo’s mission to ‘make zero-waste living a global reality’ as it celebrates its tenth anniversary.
