Cultivation
This exotic spice is a part of the ginger family and is grown as a root primarily in south-east India. The haldi root requires a climate of 20 to 30 degrees Celsius in order to flourish. Once ripe, farmers dig up the root carefully. They boil it until they know the root is soft and the flavor and color is enhanced. Next, the brown skin is carefully removed to reveal the bright yellow haldi inside and left to dry in the shade, away from the color-leaching sunlight. Finally, grind the dried root and sieve it into a fine yellow powder.
Storage
Store haldi powder in a cool, dark space. Keep it in a tightly closed container away from direct heat and sunlight so that it retains its bright yellow color and earthy flavor.
Cinnamon
Cultivation
Cinnamon is grown mostly in the Indian sub-continent. The cinnamon tree is grown for two years before being cut down to the trunk or ground level. It takes two more years before new branches shoot out to replace the original tree. Then the farmers step in to harvest the cinnamon, after which its branches are cut off and soaked in water. Then the outer bark is peeled back carefully to reveal the still moist inner bark. This bark is then carefully stripped off and sun dried. Once dried, they are expertly rolled into distinct rolls or quills. The thinner the bark, the better the quality of cinnamon. Some of these are used whole and others are ground into a fine aromatic powder.
Storage
Store rolls of cinnamon and cinnamon powder separately in a cool, dark space, away from heat and sunlight, in tightly sealed glass spice containers.

Chilies vary in taste, color, and heat depending on when they are plucked and the condition of the environment in which they are grown. The longer they are left on the plant, the hotter the chilies. They grow best in well-drained, moist soil, fertilized with compost. Chili peppers can be grown just as easily on a farm as they can in your kitchen.
Chillies are grown in warm temperatures where they spring out green, turn brown and finally become a bright red color. Once ripe, local farmers expertly hand pick the chilies and dry them in the sun, turning them over from time to time. Some of these are kept whole while others are hand-crushed with a pestle and mortar and turned into the crushed chilies and ground chili powder you use to spice up your meals.
