Agar is a gelatinous material majorly formed from the cell walls of red seaweeds, specifically Tengusa (Gelidiaceae) and Ogonori (Gracilaria). Agar is insoluble in cold water. It dissolves easily in boiling water and solidifies to form a hard gel at concentrations as low as 0.50 percent.
Agar is made up of two polysaccharides: agarose and agaropectin, with agarose accounting for around 70% of the total. Agar can be manufactured in two ways: by pressing it or by freezing it. Typically, the seaweed is cooked into a gel, then squeezed, dried, and crushed to make agar flakes, powder, and freeze-dried into bars, or strands.
It is available in several forms such as powder, flakes, bars, strands, and others. Agar powder can be used in a 1:1 ratio, while agar flakes should be used in roughly a 1:4 ratio (gelatin to agar).
